  1. Primero el bizcocho, colocamos la mariposa en las cuchillas, y en el vaso ponemos las claras, el azúcar y la sal, mezclamos 4 minutos a velocidad 4. Sacamos a un bol y reservamos. Quitamos la mariposa.
  2. Sin lavar el vaso ponemos el chocolate y troceamos 5 segundos en velocidad progresiva de 5 a 10.
  3. Añadimos la mantequilla y el azúcar y programamos 4 minutos, 37º y velocidad 2. Comprobamos que está bien fundido.
  4. Programamos velocidad 4 sin tiempo y vamos incorporando el coñac y las yemas de una en una a través del bocal.
  5. Incorporamos la harina y la levadura, 10 segundos a velocidad 2 y medio.
  6. Precalentamos el horno a 180º.
  7. A esta masa le añadimos el merengue que tenemos reservado y mezclamos con movimientos envolventes con la espátula.
  8. Vierte la mezcla en un molde engrasado.
  9. Horneamos 45 minutos. Sacamos y dejamos enfriar.
  10. Una vez frío dividimos el bizcocho en dos capas.
  11. Untamos la capa de abajo con mermelada.
  12. Ponemos encima la segunda capa.
  13. Volvemos a untar con mermelada.
  14. Hacemos la cobertura, en el vaso ponemos el chocolate y troceamos 15 segundos en velocidad progresiva de 5 a 10.
  15. Añadimos el agua, 4 minutos, 37º a velocidad 2.
  16. Incorporamos la mantequilla, 4 minutos, 37º a velocidad 2. Comprobamos que queda homogénea
  17. Vertemos sobre la tarta, y decoramos.
  18. A la nevera para que se endurezca el chocolate.
