- 1 cabeza pescado
- 1/2 cebolla
- 6 cabezas langostino
- 1 hoja laurel
- 1 litro agua
- ----- Para el resto de la receta:
- 800 gr. pescado
- 100 gr. aceite de oliva
- 1 cebolla
- 2 dientes ajo
- 20 gr. harina
- 50 gr. tomate frito
- 50 ml. sidra o vino blanco
- 2 sobres azafrán molido o colorante
- al gusto Sal, pimienta, guindilla
- 500 ml fumet aprox
Instructions to make to make Merluza a la sidra
- Lo primero que vamos a elaborar es el fumet. Aunque sino tenemos tiempo también podéis comprar un brick. El sabor no es el mismo pero nos servirá para salir del paso. Primero pelamos los langostinos y reservamos su caparazón y sus cabezas. Los cuerpos los añadiremos al final de la receta.
- En una cacerola, cubrimos el fondo con aceite. Añadimos las cabezas y caparazones de los langostinos y removemos a fuego fuerte, hasta que suelten un color rojo. Añadimos la 1/2 cebolla la hoja de laurel y el litro de agua. Sin sal. Dejamos una media hora. Colamos y reservamos.
- Ahora vamos con el resto de la receta. Troceamos la cebolla y el ajo. (en robot 2segundos/velocidad 5)
- En una cacerola añadimos el aceite y el ajo y cebolla picados. Sofreímos unos 10 minutos. (En robot 10 min / tem varoma/ velocidad cuchara y sin cubilete)
- Añadimos la harina y rehogamos unos 4 minutos (en robot: 4 min/100 grados/velocidad 1)
- Añadimos el resto de ingredientes: sidra, tomate frito, azafrán, sal, pimienta, guindilla, y el fumet) y lo cocinamos 20 minutos. (En robot: 20 min/tem varoma/velocidad 3)
- Una vez transcurrido este tiempo la trituramos con la batidora y la volvemos a verter en la cacerola (con el robot sale triturada y la vertemos en una cacerola). Añadimos la merluza ya salada y los cuerpos de langostino y dejamos cocinar 10-15 minutos. Espero que os guste
